هو زيت أبيض إلى بني مستخرج من الحيتان وبخاصة من الطبقة الدهنية المستقرة تحت الجلد، وقد كان زيت الحوت يستخدم في صنع الصابون ويتخذ وقود للمصابيح، أما اليوم فمعظم زيت الحوت يحول إلى مرجرين ودهن.
